MINI BANANA MUFFINS
These Banana Muffins are delicious! I couldn’t stop eating them! Let's get straight to the recipe!
The Recipe:
Makes 44 small muffins
Preheat oven to: 375℉
Prep time: 10 minutes
Bake for: 9-12 minutes
Cool for: 10 minutes
Ingredients
3 bananas
1 egg
½ cup or 1 stick of butter
2 tsp of vanilla extract
1 ½ cups of flour
1 tsp of baking soda
1 tsp of baking powder
½ tsp of salt
¾ cup of white sugar
½ tsp of cinnamon
½ tsp of nutmeg
First, gather and chunk 3 bananas into a bowl,
and smash until it is a smooth or chunky paste.
Once all of the bananas are mashed mix the 2 tsp of vanilla,
1 egg, and 1 stick of butter; mix thoroughly,
once this is mixed add the ¾ cup of white sugar.
In a separate bowl mix together the 1 ½ cups of flour,
1 tsp of baking soda, 1 tsp of baking powder,
and ½ tsp of salt; mix well.
Once everything is mixed, gradually add the banana mixture
to the dry mix until all are combined. After everything is
combined add the nutmeg and cinnamon. Drop about 1 tablespoon
of batter into a sprayed cupcake pan.
Bake at 375℉ for 9- 12 minutes or until a toothpick comes out clean. Let the muffins cool for about 10 minutes Enjoy!
